Module 1 - Plant Based Nutritional Science: Plant Based Health Myths, Pitfalls & Essentials. Long Term Sustainable Raw Veganism.

Homework Assignment:

Part 1 - Write a summary of your understanding of Module 1, include any outstanding questions and concerns.

Part 2 - Correlalate the nutrional science summary page to your average daily food plan and write about your findings. Are you surprised by these findings? could you be deficient or low in certain nutrients, phytonutrients and/or minerals. Does this make sense to you given your symptoms, lifestyle and metabolic output. Include the elements which you may now begin to add to your daily or weekly food plan.

Part 3 - Based on the clinical tests on Health Review page, have a blood profile taken to check for as many markers as possible on the list so that you can have a full comprehensive snapshot of your current health which you can begin to tweak as you go through the course.

Part 4 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week.

Module 2 - The Art of Advanced Fermentation & The Science of Gut Microbiota, Probiotics, Prebiotics, Synbiotics & Psychobiotics.

Homework Assignment:

Part 1 - Write a summary of your understanding of Module 2, include any outstanding questions and concerns.

Part 2 - Take an attempt at a gut microbiota timeline, detailing information about your mothers pregnancy, your birth, your feeding as a child, antibiotic use, periods of hgh stress coupled with gut, bowel or digestive diffiulties. Do yopu have a history of a high sugar diet or diet rich with fermented foods. Throughout this course you can increase your intake of fermented foods, prebiotics, polyphenols  and engage in other microbiota health promoting ctivities and trcak your progress.

Part 3 - Based on the clinical test ubiome listed on Health Review page, Consider taking this test so you can have a full comprehensive snapshot of the health of your microbiota which you can begin to tweak as you go through the course.

Part 4 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week. Consider adding fermented foods to every meal of easch day.

Module 3 - Culinary Medicine & Medicinal Liquid Nutrition. Smoothies, Seed Milks, Salads, Sprouts & Cold Pressed Elixirs.

Part 1 - Write a summary of your understanding of Module 3, include any outstanding questions and concerns. What are some of your favourite plant hormetic compounds.

Part 2 - Write up a plan of how you will begin to add more plant hormetic compounds to your diet.

Part 3 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week. Experiment with sprouting, particularly wheatgrass and broccoli sprouts.

Module 4 - Taoist Herbalism & Medicinal Mushrooms. Tonics, Teas, Tinctures & Extractions. The Science of Adaptogenics & Herbal Nootropics.

Part 2 - Write up a plan of how you will begin to add more adaptogenic herbs and medicinal mushrooms to your diet.

Part 3 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week. Experiment with our deep calm tea and three treausres tea.

Module 5 - The Art and Science of  the World's Healthiest Raw Chocolate & Healthy Light Refined Vegetable Desserts. Healthy Sugar Alternatives, Nut Free Cakes & Medicinal Cookies.

Part 1 - Write a summary of your understanding of Module 5, include any outstanding questions and concerns.

Part 2 - Design your own Nootropic Chocolate based on the plant hormetic compounds and adaptogenic herbs from Module 3 & 4 incoporated into the chocolate.

Part 3 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week. Experiment with zero sugar raw chocolate and vegetable based desserts.

Module 6 - Low Temperature Cooking & Food Dehydration. Warm porridge, Soups, Crackers, Breads, Crisps, Cookies, pizza & Wraps. The Science of High & Low Temperature Cooking.

Part 2 - Write a report of your current or previous exposure to the 4 main carcinogenic byproducts of cooking based on and correlated with your current or past daily diet.

Part 3 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week. Experiment with slow cooked stock, slow cooked porridge and leavened sunflower bread.

Module 7 - Molecular Gastronomy & Fine Dining Raw Foods: Classic French Culinary Preparation Techniques and Knife Skills. Plant Based Jelly, Tartare, Carpaccio, Ceviche & Spherification. Nutrient Optimisation Techniques.

Part 1 - Write a summary of your understanding of Module 7, include any outstanding questions and concerns.

Part 2 - Write some alternatice recipes ideas using the main techniques such as carpaccio, jelly, tartare & ceviche. Use imaginative flavour combinations.

Part 3 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week. Experiment with spherification, it is fun, trendy and very asthetic.

Module 8 - Raw Gourmet Meal Demonstration. Costing, Planning,Writing & Executing a Menu. Menu Presentation. Refined Culinary Medicine at Michelin Star Level.

Homework Assignment: The Exam 

Part 1 - Write your 5 course plant based 100% organic tasting menu, shopping list and food preparation list.

Part 2 - Do your menu cost analysis to establish cost price and appropiate sale price for the tasting menu with appropiate profit margin.

Part 3 - Based on your menu do up a mock projected profit and loss report based on serving your menu in a restaurant or cafe. Report must include staff costs, premises cost, and other appropiate costs.

Module 9 - Practical & Written Exam. 5 Course Fine Dining Refined & Medicinal Plant Based Menu Presentation. Setting up a Plant Based Business, Menu Costings & Profit & Loss.

Homework Assignment: 

Part 1 - Write up a summary of what you would change with your menu that you presented and why .

Part 2 - Make  changes to your cost analysis to establish cost price and appropiate sale price for the tasting menu with appropiate profit margin if necessary. Explain how you have taken cost down.

Part 3 - Review projected profit and loss report and make changes based on class dicussion. Use this as part of your mock business plan.

Module 10 - Plant Based Skin Care & Cosmetics which are Raw Vegan Organic & Edible. Medicinal Face Care Protocal & Nuturing the Moist Envelope of the Soul with Ammonia Oxidizing Bacteria (AOB).

Homework Assignment:

Part 1 - Write a summary of your understanding of the importance of moving away from toxic chemicals and starting to use plant based organic edible products.

Part 2 - Write up a 10 step strategy for yourself, a family member or client on how to reduce inflammation and carcinogenic exposure whilst increasing AOB ( Ammonia Oxidising Bacteria).

Part 3 - Based on the recipes covered in this module. Complete one or two of these recipes yourself and submit pictures and summary of your attempts or bring along to class next week. Experiment with vegan edible organic skincare.

Module 11 - Lifestyle Medicine Part I. BioHacking & Functional Health. How to achieve optimum Health, Happiness & Longevity with Passion, vitality and Incredible Relationships.

Part 1 - Write a summary of your understanding of Lifestyle Medicine.

Part 2 - Write up a 10 step biohacking strategy for yourself, a family member or client on how to achieve greater healthy, energy and longevity.

Part 3 - Based on the activities covered in this module. Complete one or two of these activities yourself and discuss in class next week. Experiment with sauna, massage, ecstatic dance, meditation etc

Module 12 - Lifestyle Medicine Part II. Raw Food on The Go & How to Travel and Thrive on Plant Based Health Foods. Lifestyle Biohacks & Travel BioHacks.

Part 1 - Write a summary of your understanding of the importance of limiting emf exposure.

Part 2 - Write up a 10 step strategy for yourself, a family member or client on how to reduce emf exposure.

Part 3 - Write up a 10 step strategy on how to limit radiation exposure whilst travelling and tips for supporting health whilst travelling.
